Grandma's Shortbread

As mother day is approaching us, we all want to give back to our mothers for everything that they have done for us or maybe you're expecting something nice for Mothering Sunday. You may be thinking about getting your mother gifts, a meal out, a meal in or simply baking something sweet.
 
If you haven't thought of anything to get your mum yet, don't worry we have you covered! Grandma's shortbread has been the talk of the office for a very long time and we thought it was about time we shared with you this melt-in-your-mouth shortbread recipe.
 
Ingredients:

8oz salted butter

8oz plain flour

3oz cornflour

3oz caster sugar

Method:

1. Heat the oven to 150C/302F/Gas 2 and line a rectangular metal baking tin with baking parchment

2. Beat all of the ingredients together until combined

3. Spread mixture into the baking tin (ensure that the mixture is flat!)

3. Bake in the oven for 40 - 45 minutes, until golden brown on the edges

4. Rest to cool in the tin, and remember to cut them into slices while they are still warm

5. Sprinkle with caster sugar
